Lemony Creamy Linguine

Lemony Creamy Linguine
With citrus being at the height of their season, what better way to brighten up the winter than with lemons & limes & tangerines & grapefruit & plummelos! Here's one super simple recipe to try tonight!


Elements:
  • 8oz Linguine (be creative, try flavored noodles or rice noodles!)
  • 1/2 c. light Cream Cheese
  • 2 Tbs Butter
  • 1 Lemon, juiced
  • 1 Tbs Lemon Zest grated
  • 1/2 - 1 c. Fresh Chopped Parsley
How-To:

1) Cook noodles according to package.
2) In a large sauce pan, warm cream cheese, butter & lemon juice over low heat.
3) Drain pasta reserving some of the cooking water to the side. Add pasta, lemon zest & parsley to cream cheese. Toss to coat. Add cooking water to create desire creaminess. Season with salt & pepper to taste.
